This is the best banana bread recipe I've ever tried! You can substitute the nuts with a cup of chocolate chip morsels.My sister made this over the weekend, and it was sooooooo good. Hands down--theeee best. Too bad, I could only have half a slice.I want to try substituting some of the ingredients for the healthier type (i.e. flour for whole wheat flour). I'll experiment, and let you know.
Ingredients: Dry Ingredients: 2 cups flour 3/4 cup sugar 3/4 teaspoon baking soda 1/2 teaspoon salt 1 1/4 cup toasted walnuts
Wet Ingredients: 3 over ripe bananas, mashed 2 eggs, slightly beaten 6 tablespoons butter, melted then cooled 1/4 cup plain yogurt 1 teaspoon vanilla extract
Directions: 1. Grease and lightly flour bottom of glass loaf pan. (If using non-stick loaf pan, the grease and flour sides).
2. Preheat oven to 350F. Set rack to middle-lower position.
3. In large bowl, combine dry ingredients and mix well. Set aside.
4. In medium bowl, use a wooden spoon to stir together the banana, eggs, butter, yogurt and vanilla.

Using a rubber spatula, gently fold in banana mixture into the dry
ingredients, being careful not to over-mix (mixture should be lumpy).
6. Pour into loaf pan and bake for 55 minutes or until toothpick inserted into bread comes out clean.
